raspberry chocolate chip bars

Considering these raspberry chocolate chip bars are one of our all-time favorite treats around here, I can't believe I haven't shared them with you yet. Today was the perfect rainy + foggy day to spend indoors with my oven, warm + dry. The foggy haze out my window makes me so very homesick for San Francisco. After living there for 2 years, fog without a foghorn has become a foreign concept. Ahem, must get a grip.

Ingredients:


1 1/2 c. flour
1/2 c. sugar
1/2 t. baking powder
1/2 t. salt
1/2 c. butter, softened
1 egg
1/4 c. milk
1/4 t. vanilla
3/4 c. raspberry preserves (or whatever you can scrape out of the bottom of the jar)
1 c. chocolate chips1. Pre-heat oven to 400 degrees. Grease your favorite baking dish.

2. Combine dry ingredients, cut in butter until mixture becomes coarse crumbs. Add egg, milk, vanilla and mix on medium speed until beautifully blended.3. Save 1/2 c. batter for later. Resist urge to lick. :) Spread remaining batter in pan. Spread preserves evenly over top, then bring on the chocolate chips.

4. Drop the saved batter over the top, in small spooned increments.
5. Bake 25 minutes until golden.

6. Cool, cut, and indulge. Bet you can't eat just 1.P.S. Apologies for the slightly flat, unappetizing photos. The fluorescent lighting in our kitchen does nothing for my cooking.

you had me at raspberry and chocolate, my dear. yummm. oh my goodness! i cannot wait. i must have this. soon! and i just know grant will be super excited about the raspberry part. (i'm always looking for desserts that i hope will tempt him!)

ps. i LOVE being in people's dreams! it is truly one of my most favorite things. and i can't thank you enough for telling me about this one.. oh, what a gem. now THAT was a truly dreamy dream. how fun would that be? hearing about it absolutely made my day!

These look delicious...rasberry + chocolate + batter....does it get any better than that combo? Wait--how do these bars pair with ice cream...? :)

Delicious recipe!!! I brought a pan of these for refreshments after our Wednesday night lenten service tonight. They were such a hit! Everyone loved them. Thanks for sharing the recipe.
